Kielbasa and veggie hash
Makes 6 servings
Ingredients
- 1 (14 ounce) package turkey kielbasa, cut into ¼ inch rounds
- 1 green bell pepper, chopped
- 1 orange bell pepper, chopped
- 1 onion, wedged
- 3 small potatoes, peeled and chopped
- 2 Tbsp. olive oil
- Salt and pepper to taste
Preparation
In a heavy skillet, heat 1 tbsp of olive oil over medium-high heat. Add the potatoes to the skillet and season with salt and pepper to taste. Fry until golden brown and cooked through, about 8-10 minutes, stirring a few times to ensure even browning.
Remove potatoes from skillet and set aside. Add kielbasa to the skillet and cook for about 5 minutes or until browned. Remove kielbasa from the skillet and set aside.
Add the other tablespoon of olive oil to the skillet, add peppers and onions and cook for 5 minutes or until softened but still slightly crunchy, stirring occasionally.
Add back the cooked potatoes and kielbasa to the skillet and mix everything together. Serve immediately.
