Makes 6 servings


  • 2 cups old fashioned oats
  • 1 tsp. baking powder
  • ¼ cup light brown sugar
  • 2 Tbsp. cocoa powder
  • ¼ tsp. salt
  • 2 cups fresh or frozen cherries
  • 2 eggs or 2 flax eggs (2 Tbsp. ground flax seed and 6 Tbsp. water)
  • 1¾ cup milk of your choice
  • 1 tsp. vanilla extract
  • 3 Tbsp. melted butter
  • 2 Tbsp. maple syrup
  • ½ cup pecans


  1. Preheat your oven to 325 degrees and grease a 2-quart casserole dish.
  2. Mix eggs, milk, vanilla extract, melted butter and maple syrup in a large bowl.
  3. In a medium bowl, mix the oats, baking powder, brown sugar, cocoa powder and salt.
  4. Add the dry ingredients to the bowl with milk. Stir until well-combined. Add the fruit and nuts.
  5. Pour all the ingredients into the casserole dish and bake for 45 minutes to an hour

Nutrition information per serving: 350 calories, 17 grams fat, 9 grams protein, 43 grams carbohydrates, 5 grams fiber, 200 milligrams sodium (using 2 large eggs and 1% milk)
