Ingredients
- 2 cups old fashioned oats
- 1 tsp. baking powder
- ¼ cup light brown sugar
- 2 Tbsp. cocoa powder
- ¼ tsp. salt
- 2 cups fresh or frozen cherries
- 2 eggs or 2 flax eggs (2 Tbsp. ground flax seed and 6 Tbsp. water)
- 1¾ cup milk of your choice
- 1 tsp. vanilla extract
- 3 Tbsp. melted butter
- 2 Tbsp. maple syrup
- ½ cup pecans
Preparation
- Preheat your oven to 325 degrees and grease a 2-quart casserole dish.
- Mix eggs, milk, vanilla extract, melted butter and maple syrup in a large bowl.
- In a medium bowl, mix the oats, baking powder, brown sugar, cocoa powder and salt.
- Add the dry ingredients to the bowl with milk. Stir until well-combined. Add the fruit and nuts.
- Pour all the ingredients into the casserole dish and bake for 45 minutes to an hour
