Makes 2 servings


  • 1 sweet potato, peeled and sliced thinly
  • 1 Tbsp. olive oil
  • ½ small red onion, sliced thinly
  • 1 Tbsp. butter
  • 4 slices whole wheat bread
  • 2 slices Havarti cheese
  • 2 large kale leaves, stem removed


Preheat oven to 400 degrees F. Place sweet potato slices on a baking sheet lined with parchment paper and bake in oven for about 20 minutes or until tender. Meanwhile, heat olive oil in small pan and saute onion until slightly brown and caramelized.

Heat panini maker or grill (if making grilled sandwiches instead). Spread butter on one side of each slice of bread. On the unbuttered side of one slice, layer one slice of cheese, half of the sweet potato slices and half of the onion slices. Top with another slice of bread, with buttered side up. Do the same with the other two slices of bread. Place on panini and close the lid, grilling to desired crispiness. Serve immediately.
