Spicy pasta with shrimp
Makes 6 servings
Ingredients
- 8 ounces whole wheat rotini
- 2 Tbsp. butter
- 3 cloves garlic, minced
- ½ medium onion, diced
- 12 ounces shrimp, de-veined & tails removed
- 1 tsp. garlic powder
- 2 tsp. crushed red pepper flakes
- 1 tbsp. Italian seasoning
- 1 15-ounce can crushed tomatoes
- ½ cup low-fat cottage cheese
Preparation
Cook pasta according to package directions. Drain & set aside.
Heat a large sauce pan over medium heat. Add butter & shrimp and saute for 3-4 minutes until shrimp turns pink. If using pre-cooked shrimp, saute 2-3 minutes until heated through. Transfer shrimp to a bowl & set aside.
Add crushed tomatoes, minced garlic, garlic powder, red pepper flakes, & italian seasoning to the pan. Stir over medium heat for 5 minutes or so until fragrant and heated through. Add cottage cheese. Cover & simmer for 5-10 minutes.
Add shrimp back to pan and stir to combine. Toss with cooked pasta and serve.
