Makes 4 servings

Ingredients

One medium spaghetti squash
1 lb. ground turkey
1 cup pizza sauce
1 tsp. dried basil
1 tsp. Italian seasoning
1 tsp. garlic powder
¼ tsp. crushed red pepper flakes
3 eggs, whisked

Preparation

Bake the spaghetti squash first. Cut in half length-wise and scoop seeds out of squash; place cut-side down on a baking sheet. Bake at 400◦ for ~30-40 minutes, until squash scoops out of the skin easily. Scoop out the squash strings and set aside. Preheat oven to 375◦. Heat Italian sausage and onion in a skillet over medium-high heat; cook until sausage is all the way cooked through, breaking up into pieces as it cooks.

Add pizza sauce, basil, Italian seasoning, and garlic powder to sausage mixture. Add red pepper flakes to taste. In an 8x8 baking dish, combine the spaghetti squash and sausage mixture. Lastly, add whisked eggs to the baking dish and mix everything together. Place in preheated oven and bake for 45-60 minutes, until the top of the mixture forms a slight crust which doesn’t give when pressed. Let rest five minutes prior to serving.
