Makes 10 pancakes


  • 1/3 cup whole wheat flour
  • 2 ½ tsp. baking powder 
  • 1 tsp. vanilla
  • 1 ½ cups skim milk 
  • 2 cups oatmeal
  • 2 eggs 
  • 1/3 cup canola oil


Mix flour, baking powder, and vanilla together, set aside.  Heat milk, but don’t scald, and pour over dry oats; let set for five minutes to soften. Beat in eggs. Add oil and dry ingredients.  Drop spoonful onto hot griddle, brown on both sides. 

Nutrition analysis per serving: 160 calories, 9 g fat, 5 g protein, 16 g carbohydrates, 2 g fiber, 180 mg sodium
