Oatmeal pancakes recipe
Makes 10 pancakes
Ingredients
- 1/3 cup whole wheat flour
- 2 ½ tsp. baking powder
- 1 tsp. vanilla
- 1 ½ cups skim milk
- 2 cups oatmeal
- 2 eggs
- 1/3 cup canola oil
Preparation
Mix flour, baking powder, and vanilla together, set aside. Heat milk, but don’t scald, and pour over dry oats; let set for five minutes to soften. Beat in eggs. Add oil and dry ingredients. Drop spoonful onto hot griddle, brown on both sides.
