No-bake energy bites
Makes about 25 bites
Ingredients
- 1 cup old fashioned oats
- ½ cup puffed rice
- ½ cup ground flaxseed
- ½ cup unsweetened shredded coconut
- ½ cup natural peanut butter
- 1/6 cup honey
- 1/6 cup pure maple syrup
- ½ tsp. vanilla extract
Preparation
In a large mixing bowl, combine all ingredients. (We suggest using gloved hands to mix ingredients together or use a standing mixer with paddle on low). Once combined, use cookie scoop to portion mixture out. Roll into a ball. Place in an airtight container and store in refrigerator for 1 week.
Nutrition analysis per serving (1 energy bites): 170 calories, 8g fat, 21g carbohydrate, 2g fiber, 4g protein, 50mg sodium
NOTE: any nut butter can be used in this recipe if you prefer peanut alternatives: almond butter, cashew butter, sunflower butter, etc.
