Honey grilled shrimp and pineapple kabobs
Makes 2 servings
Ingredients
- 2 Tbsp. honey
- 2 tsp. lemon juice
- 12 peeled, de-veined large shrimp
- 1 can pineapple (or 1 whole fresh pineapple)
- 4 kabob skewers, metal or wooden
Preparation
Turn on grill to high heat (can also use a grill pan or broiler). If using wooden skewers, soak covered in warm water for 30 minutes. Whisk together honey and lemon juice until combined. Set aside. Cut pineapple into one-inch chunks. Thread head of shrimp onto skewer, add pineapple chunk, and then thread tail of shrimp onto skewer on the other side of the pineapple. Repeat until all shrimp are added to a skewer. Brush honey and lemon mixture on both sides of shrimp and pineapple.
Grill kabobs for two minutes on each side. Repeat until shrimp and pineapple are just slightly blackened. Serve immediately.
