Easy homemade granola recipe
Makes 24 servings
Ingredients
- 3 cups old fashioned oats
- 1 cup unsalted cashews, coarsely chopped
- 1 cup unsweetened coconut flakes
- 1 cup slivered almonds
- ½ cup sunflower seeds, shelled
- 4 Tbsp. unsalted butter
- ¼ cup packed brown sugar
- ¼ cup honey
- 1 tsp. vanilla extract
- ¼ tsp. salt
- ¼ tsp. cinnamon
Preparation
In a large mixing bowl, combine oats, cashews, coconut flakes, almonds and sunflower seeds and set aside. Heat butter in a small saucepan over medium heat until completely melted. Stir in brown sugar and honey. Bring to a boil and cook until slightly thickened, about five minutes. Add vanilla, salt and cinnamon and stir until well combined. Remove from heat and pour immediately over oat mixture. Stir until oat mixture is coated evenly with brown sugar mixture.
Prepare baking sheet by wrapping with tin foil and coating with cooking spray. Spread mixture evenly over baking sheet. Bake until toasted (about 10 minutes), stir, and bake an additional five to 10 minutes. Remove from oven and let cool, eventually transferring to an airtight container to store and use as desired.
Note: can adjust oat mixture to include your own desired ingredients. Additional options could include walnuts, pecans, crasins, raisins, or other dried fruit. Can also use almond extract in place of vanilla extract or nutmeg in place of cinnamon.
