Citrus salad with star anise syrup
Makes 10 servings
Ingredients
- 5 oranges, segmented
- 5 small grapefruits, segmented
- 1-2 star anise
- ¼ cup granulated sugar
- ½ cup water
Preparation
In a small sauce pan, combine sugar, water and star anise. Bring to a boil and reduce heat. Simmer for about 15 minutes. Remove from heat and let cool.
In the meantime, segment your oranges and grapefruits. Here's how:
Slice off both ends of the grapefruit.
Rotate the grapefruit so one of the flat ends is resting on the cutting board. Use a knife to slice off a section of the peel, following the curve of the grapefruit. Repeat until you have removed the entire peel.
Cut along the membrane on either side of the slice of grapefruit.
Be careful not to cut your fingers.
Use the knife to scrape the slice of grapefruit away from the center of the fruit.
In a medium bowl, combine citrus fruit and anise syrup. Chill for at least an hour before serving for best flavor.
