Cherry date scone recipe
Makes 16 servings
Ingredients
- 2 cups flour
- 1 1/2 cup quick oats
- 1/2 cup sugar
- 4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup 1% milk
- 5 Tbsp. butter (melted)
- 4 Tbsp. canola oil
- 1 Tbsp. ground flax seed
- 3 Tbsp. water
- 1/2 tsp. vanilla
- 1/4 cups dried chopped dates
- 1/4 cup dried cherries
- 1/4 cups chopped pecans
- 1 Tbsp. honey
Preparation
Preheat oven to 425.
Combine flour, oats, sugar, baking powder and salt in a large bowl.
Beat milk, butter, flax, water, and vanilla together in a medium bowl. Stir the wet ingredients into the dry ingredients until completely blended. Fold in dried fruit and nuts.
Form the dough into a ball and cut in half. Form each piece of dough into a 7" round X 3/4" thick circle on a parchment lined baking sheet. Score each circle of dough into 8 wedges. Bake 18-20 minutes or until lightly browned.
Remove from the oven and place on a wire rack over wax paper. Drizzle with honey while still warm.
