Guacamole tacos

Makes 2 servings

Ingredients

  • 1 medium avocado, halved and pitted
  • 1 clove garlic, minced
  • ½ lime, juiced
  • 1 medium tomato, chopped
  • 1 (15 oz.) can black beans, drained and rinsed
  • 2 cups spinach, chopped
  • 2 (6 in.) flour tortillas

Preparation

In a small bowl, mash avocado with garlic and lime juice. Split guacamole between two flour tortillas. Top with beans, tomato and spinach. Serve with your favorite fruit.
