
Crockpot meatball subs
Makes 4 sandwiches
Ingredients
- 1 pound lean ground turkey
- 1 egg
- ⅓ cup bread crumbs
- 1 tsp. dried parsley
- 1 tsp. onion powder
- 15 oz crushed tomatoes
- 1 tsp. garlic powder
- 1 tsp. Italian seasoning
- ¼ tsp. ground pepper
- 2 cups fresh spinach
- 4 6-inch wheat sub bread
- 4 slices Mozzarella cheese
Preparation
In a bowl, beat the egg. Add bread crumbs, parsley, onion powder, & ground turkey. Form into 12 meatballs. Add to bottom of a slow cooker.
Over the meatballs, add crushed tomatoes. Sprinkle on garlic powder, Italian seasoning, & pepper. Stir. Cook on low for 6-8 hours in slow cooker.
When meatballs are done, assemble sandwiches. Add ½ cup spinach to hoagie; top with three meatballs, tomato sauce, and a slice of cheese. Serve warm.
