Dark chocolate rounds

Makes 16 rounds

Ingredients

  • 4 oz. 70% dark chocolate
  • 32 craisins
  • 32 pistachios
  • 3 Tbsp. walnuts, coarsely chopped

Preparation

In a double boiler or in a heat proof bowl over simmering water heat 3 oz. chocolate until the thermometer reads 110° F.

Remove from heat and add the remaining 1 oz. chocolate. Let cool for five minutes

Use a teaspoon to pour out rounds of chocolate onto wax paper. Place two craisins, two pistachios and one piece of walnut into each round. Cool in the refrigerator for at least 30 minutes.

Store the chocolate rounds in the refrigerator in an air-tight container.
