Zucchini muffins recipe

Makes 12 muffins

Ingredients

  • ⅓ cup olive oil
  • ½ cup honey
  • 2 eggs
  • ⅔ cup buttermilk
  • 1 tsp. ground cinnamon
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ¼ tsp. ground nutmeg
  • 2 tsp. vanilla extract
  • 1 ½ cups grated zucchini
  • 1 ¾ cups whole wheat flour

Preparation

Preheat oven to 400 degrees F. In a large bowl, mix together oil, honey, eggs, buttermilk and vanilla. Add zucchini and mix well. Add flour, cinnamon, baking powder, baking soda, salt and nutmeg to the mixture and mix until just wet.
Spray a muffin pan with non-stick spray and spoon mixture into each muffin well. Bake for 16-19 minutes or until a toothpick inserted comes out clean. Allow muffins to sit in muffin tin for about five minutes before removing from muffin tin onto a cooling rack.
