Makes 12 servings

Ingredients

2 ½ cups all-purpose flour
2 cups sugar
1 Tbsp. pumpkin pie spice
1 tsp. baking soda
½ tsp. salt
2 eggs, lightly beaten
1 cup pumpkin, solid packed
½ cup applesauce
2 cup apples, peeled and finely chopped

Preparation

In a bowl, combine the first five ingredients. In a separate bowl, combine eggs, pumpkin, and applesauce. Mix liquid ingredients with dry ingredients and stir until moistened. Stir in apples. Spoon batter into paper-lined muffin cups filling three-quarters full. Preheat oven to 350° and bake 35 to 40 minutes or until toothpick comes out clean.
