Oatmeal raisin pancakes

Makes 6 serving

Ingredients

  • 2 cups quick cooking oats
  • 2 cups skim milk
  • 2 Tbsp. lemon juice
  • 2 eggs
  • 2 Tbsp. sugar
  • 2 Tbsp. canola oil
  • ½ cup all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • ¼ tsp. salt
  • ½ cup raisins

Preparation

In a small bowl, combine milk, lemon juice and cooking oats. Let stand for 5 minutes. Add eggs and oil. Set aside.

In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and salt. Stir in the wet ingredients, stirring until just moistened. Add raisins.

Pour batter in ¼ cup servings onto hot griddle coated with cooking spray. Turn when bubbles form on top. Cook until second side is golden brown.
