Ingredients
- 1 cup all-purpose flour
- ½ cup whole wheat flour
- ¾ cup ground flaxseed
- ⅔ cup brown sugar
- 2 tsp. baking powder
- ½ tsp. salt
- 2 tsp. cinnamon
- 2 apples, shredded
- ½ cup raisins
- ½ cup chopped pecans
- 1 ½ cup carrots, shredded
- 2 eggs, beaten
- 1 cup Fiber One cereal
- ¾ cup skim milk
- 1 tsp. vanilla
Preparation
Mix together flours, ground flaxseed, brown sugar, baking powder, salt and cinnamon in a large bowl. Stir in apples, raisins, nuts and carrots. In a separate bowl, pour milk over Fiber One and let stand for one minute to soften. Add beaten eggs and vanilla to milk mixture. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not overmix. Fill muffin cups ¾ full. Bake at 350 degrees for 20-25 minutes.
