Banana protein muffins recipe

Makes 24 muffins

Ingredients

5 large bananas, mashed
2 eggs
½ cup sugar-free syrup
½ cup olive oil
1 tsp. vanilla
2 cups almond meal
2 scoops protein powder
1 cup oatmeal
½ cup pancake mix
1 tsp. baking soda
½ tsp. salt
⅓ cup mini chocolate chips

Preparation

Combine banana, eggs, syrup, olive oil, vanilla and mix thoroughly. In separate container, stir together almond meal, protein powder, oatmeal, pancake mix, baking soda and salt. Pour liquid ingredients into dry ingredients and stir gently until mixed. Add chocolate chips. Place 24 paper liners in muffin cups. Fill ½ way with muffin mixture. Bake at 350 degrees for 20-25 minutes.

Nutrition analysis per serving: 175 calories, 12 g fat, 6 g protein, 16 g carbohydrate, 2 g fiber, 175 mg sodium.
