Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 cup old fashioned oats
  • ¼ tsp. salt
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 1 cup sugar
  • ¾ cup canola oil
  • 2 flax eggs*
  • ½ cup plain Greek yogurt
  • 1 cup unsweetened applesauce
  • ½ tsp. vanilla

Preparation

Preheat oven to 350° F and grease loaf pan

In a large bowl, combine flours, oats, salt, cinnamon, and baking powder. Set aside.

In a medium bowl, combine sugar, oil, flax eggs, yogurt, applesauce, and vanilla. Mix with whisk. Stir into dry ingredients until just combined.

Scoop the batter into the prepared loaf pan and bake for 45-48 minutes, or until a toothpick inserted into the center comes out clean.

Let cool, and cut into 12 slices. Enjoy!

*A flax egg consists of 1 Tbsp. ground flax seed and 3 Tbsp. water. Can be substituted with eggs.
