Sautéed kale salad
Makes 3-4 servings
Ingredients
- 1 large bunch fresh kale, chopped
- 2 Tbsp. olive oil
- 1-2 cloves garlic, minced
- Salt* and pepper to taste
- Lemon juice* to taste
Preparation
In a large skillet over medium, heat oil. Add garlic and sauté until fragrant. Add chopped kale. Stir constantly, bringing the bright, cooked pieces to the top and the duller, uncooked pieces to the bottom. Remove from heat when kale is bright green and tender. Do not overcook. Sprinkle with salt, pepper and lemon juice to taste. Serve.
