Ingredients

  • 2 slices whole grain bread
  • 2 oz. cheddar cheese 
  • 1 small tomato, thinly sliced
  • 1 tsp. butter

Preparation

Pre-heat a non-stick pan on medium heat for two to three minutes. Once it's heated, lay out the tomato slices on the hot pan to help cook off some of the water. Do this for 2-3 minutes, making sure to not burn the tomato slices. Once done, move the cooked tomato slices to a plate. Clean out your pan with a paper towel (make sure it's not too hot!) and place back on the stove top.

Next, spread half of the butter on the outside of one slice of bread and place that buttered side on the pre-heated pan. Then place the cheese on top on the bread and then the cooked tomato slices on the cheese. Place the other slice of bread with the remaining butter on the other side that will be cooked when you flip the sandwich.

Cook on one side until your desired brownness, then using a spatula, flip your sandwich and cook the other side until your desired doneness. 
Let it cool on a cutting board for a few minutes before you slice the sandwich and enjoy!
