Asian-inspired simple salad
Makes 1 serving
Ingredients
- ½ small head romaine or leaf lettuce, chopped
- ½ cup shredded purple cabbage
- ⅓ large cucumber, chopped
- 1 green onion, thinly sliced
- ¼ cup sliced almonds
- ¼ cup chow mein noodles
Dressing:
- 1 Tbsp. sesame oil
- 2 Tbsp. rice vinegar
- ¼ tsp. sugar
- Salt and pepper to taste
Preparation
On a large plate, layer salad ingredients. In a small container with lid, combine dressing ingredients and shake vigorously until combined. Pour over salad. Serve immediately.
NOTE: can be served with chicken, shrimp, pork or beef if desired.
