Ingredients

2 lbs. ground turkey
2 Tbsp. olive oil
2 large eggs
½ cup plain bread crumbs
½ cup chopped fresh parsley
1 tsp. salt
1 tsp. ground fennel
1 tsp. ground pepper
1 granny smith apple, peeled and shredded

Preparation

Preheat oven to 450 degrees F. Drizzle olive oil into a 9x13-inch baking dish and use hand to evenly coat the entire surface.

Combine ground turkey, eggs, breadcrumbs, parsley, salt, fennel, pepper and apple in a large mixing bowl and mix until thoroughly incorporated.

Roll mixture into golf ball-size meatballs, about 1 ½ inches, making sure to pack meat firmly.

Arrange meatballs in the baking dish, lining them up snugly.

Bake for 20 minutes or until meatballs are cooked through, reaching internal temperature of 165 degrees.

Serve over mashed potatoes, rice or pasta.
