Ingredients
- 2 Tbsp. coconut oil
- 3 garlic cloves, minced
- 1 Tbsp. ginger, silvered or minced
- 3 cups mixed vegetables, sliced
- 1 small yellow onion, chopped
- 1 cup coconut milk
- 1 Tbsp. curry powder
- ½ lime, juiced
- ½ lime, zest
- Pinch of cilantro
Preparation
Heat oil in a large skillet on medium-high heat, then add garlic and ginger. Saute for a few seconds. Add mixed vegetables and onions. Stir-fry for one to two minutes. Add coconut milk, curry, lime juice and zest. Bring to a simmer, then remove from heat. Serve with rice or noodles. Garnish with cilantro.
