Whole wheat cinnamon pancakes

Makes 20-24 pancakes

Ingredients

  • Dry mix:
  • 1 ½ cups whole wheat flour
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • ¼ cup dry skim milk powder
  • 2 Tbsp. buttermilk powder
  • 1 ½ tsp. baking powder
  • 1 tsp. baking soda
  • ¾ tsp. salt
  • 1 ½ Tbsp. cinnamon
  • Wet ingredients:
  • 1 egg
  • 2 Tbsp. oil
  • 1 ¼ cup water

Preparation

In a large bowl, combine dry ingredients, using a whisk to combine. Keep in an air-tight container. When ready to make pancakes, place 1 ½ cups dry mix into a medium bowl. Add wet ingredients. Use whisk to combine.

Nutrition information per pancake: 100 calories, 3g fat, 2g protein, 14g carbohydrate, 2g fiber, 150mg sodium
