Makes 9 servings

Ingredients

  • 1 ¼ cups whole wheat flour
  • ¾ cup yellow corn meal
  • ¼ cup sugar
  • 2 tsp baking powder
  • 1 cup skim milk
  • ¼ cup olive oil
  • 1 egg

Preparation

Heat oven to 400 degrees. Grease a 9x9 pan. In large bowl, combine dry ingredients. Stir in remaining ingredients and mix until moistened. Pour batter into pan and bake for 20-25 minutes. Bread should be golden brown and a toothpick should come out clean when inserted into the center. Serve warm.
