Mini meatloaves with potatoes & green beans recipe

Makes 6 servings

Ingredients

  • 1.5 pounds fingerling potatoes, washed and quartered
  • 2 Tbsp. olive oil
  • Salt, to taste
  • 2 pounds 90% lean ground beef
  • ½ medium yellow onion
  • ½ cup plain breadcrumbs
  • ¼ cup barbeque sauce
  • ¼ cup ketchup
  • 1 large egg
  • 1 pound green beans, trimmed

Preparation

Preheat oven to 400 degrees. Toss potatoes on large baking sheet with olive oil and salt. Spread evenly and set aside.

In a large bowl, combine beef, onion, bread crumbs, barbeque sauce, tomato, and beaten egg. Shape mixture into 6 small loaves and place on a wire rack over a baking sheet. Add the sheet with potatoes and the sheet with meatloaves to the oven and bake for 30 minutes.

After 30 minutes, remove the baking sheet with the potatoes. Add the green beans to the sheet and stir to combine. Put sheet back in the oven with the meatloaves and bake everything for an additional 12 minutes, until the internal temperature of the meatloaves is 150 degrees. Remove from oven and serve immediately.
