
Pesto toast recipe
Makes 1 serving
Ingredients
- 2 eggs
- 1 tsp. olive oil
- 2 slices whole wheat bread
- 2 Tbsp. pesto
- 2 thick slices tomato
- ½ cup arugula or spinach
Preparation
Add 1 tsp. olive oil in a non-stick pan and heat over medium heat until it shimmers. Fry the eggs in the hot oil.
Toast 2 slices of bread and spread with pesto. Top each piece of toast with arugula, a fried egg and a slice of tomato.
