Makes 2 servings

Ingredients

  • 8-ounce bag of fresh spinach (2 cups wilted)
  • 1 TBSP olive oil
  • 2 hard-boiled eggs
  • 8 jalapeno stuffed green olives
  • 1 small red sweet pepper
  • 2 ounces swiss cheese

Wilted spinach instructions

Place olive oil and fresh spinach in a medium sauté pan over medium to high heat. Cook spinach until leaves begin to wilt, then toss well and remove from heat to cool.

While spinach is cooling, slice hardboiled eggs, olives and pepper width wise to form a ring shape.

Cut swiss cheese in small cubes.

Serve 1 cup wilted, cooled spinach in a small bowl and top with 1 sliced hard-boiled egg, 4 sliced olives, a few rings of pepper and 1-ounce cubed swiss cheese. Serve cold.
