Makes 4 serving

Ingredients

  • 1 1/3 cups water
  • 2/3 cup apple juice or apple cider
  • 1/2 cup canned pumpkin
  • 1/3 cup chopped dried apples
  • 1 1/4 cups quick-cooking oats
  • 1 Tbsp. packed brown sugar
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/2 cup nonfat vanilla yogurt

Preparation

Combine water, apple juice, pumpkin ,and dried apples in a saucepan. Bring to a boil. Add oats, brown sugar, cinnamon, and nutmeg to boiling mixture. Cook for 1 minute, stirring occasionally. Pour oatmeal into 4 bowls. Top each with 2 Tbsp. of yogurt. Garnish with additional cinnamon, if desired.
