Salsa black bean burgers
Makes 8 servings
Ingredients
- ½ cup prepared salsa
- 2 (15-oz.) cans black beans, rinsed and drained well
- 1 cup well-crushed tortilla chips
- ½ cup grated white onion
- 1 large egg, beaten
- 3 Tbsp. light mayonnaise
- 4 tsp. chili powder
- 2 tsp. ground cumin
- ½ tsp. salt
- 3 Tbsp. canola oil, divided
Preparation
Place salsa in a fine mesh sieve to drain excess liquid. Mash the beans with a potato masher—or use a food processor. Stir in the drained salsa, tortilla chips, onion, egg, mayonnaise, chili powder, cumin and salt. Let stand for 10 minutes to allow chips to absorb moisture.
Form the bean mixture into 8 burgers using approximately ⅓ cup for each.
Heat half the oil in a large nonstick skillet over medium-high heat. Reduce heat to medium, add 4 burgers and cook until browned and heated through, about 3 to 4 minutes per side. Repeat with the remaining oil and burgers.
Serve burgers on whole grain buns with your favorite toppings—tomato slices, sprouts, onions, guacamole, etc.
