Ingredients

  • 2 egg whites
  • ⅓ cup quick-cooking oats
  • ½ cup plus 2 Tbsp. chipotle salsa, divided
  • 4 Tbsp. ketchup, divided
  • 1 lb. extra-lean ground beef

Preparation

Preheat oven to 350 degrees. In a large bowl, beat egg whites with a whisk. Stir in oats, 1/2 cup salsa, and 2 Tbsp. ketchup. Add beef and mix well.

Oil a mini muffin tin and fill with the beef mixture. Bake for 30 minutes, or until the top is golden brown, juices run clear and the meat loaves reach 155 degrees.

OR

Line a baking sheet with foil and coat with cooking spray. Divide beef mixture into 4 equal portions, shaping each into an oval-shaped loaf. Place loaves on prepared pan. Bake for 30 minutes, or until the top is golden brown, juices run clear and the meat loaves reach 155 degrees.

Meanwhile, combine 2 Tbsp. salsa and 2 Tbsp. ketchup in small bowl. Spread mixture evenly over cooked loaves.
