Cucumber melon salad
Makes about 8 cups
Ingredients
- ¼ cup fresh lime juice
- ¼ tsp. salt
- ⅛ tsp. ground black pepper
- 1 large cucumber, deseeded and coarsely chopped
- 6 cups coarsely chopped cantaloupe
- 3 green onions, thinly sliced
- ½ cup chopped cilantro
Preparation
In a large bowl, whisk together lime juice, salt and pepper. Add remaining ingredients and toss to coat. Chill until serving.
