Baked blueberry oatmeal recipe
Makes 6 servings
Ingredients
- 2 cups Old Fashioned Oats
- 1 tsp. baking powder
- ¼ tsp. salt
- ½ tsp. cinnamon
- 1 Tbsp. ground flax
- ⅓ cup maple syrup
- 2 cups 1% milk
- 1 large egg
- 2 Tbsp. melted butter
- 2 tsp. vanilla
- 1 ½ cups fresh or frozen blueberries
- ¼ cup walnuts
Preparation
Preheat the oven to 375 degrees F and grease an 8 X 8 inch baking dish
Combine oat, baking powder, salt, flax and cinnamon in medium bowl. In a separate bowl, combine maple syrup, milk, egg, melted butter and vanilla extract. Add the dry ingredients into the wet ingredients and stir until well combined and then add the blueberries. Pour the oatmeal mixture into the baking dish and top with walnuts.
Bake for 35-45 minutes or until set.
