Ingredients
- 1 small onion, chopped
- 1 Tbsp butter
- 6-8 red potatoes, chopped
- 2 cups matchstick carrots
- 1 lb Italian sausage
- 1 cube Chicken bullion
- 1/2 cup evaporated milk (unsweetened)
- 1 Tbsp corn starch
- Salt and pepper to taste
- Baby kale or greens of your choice
Preparation
Brown sausage, set aside on a plate with paper towel to drain some of the fat. In a large pot heat butter and add onion and heat until onion is clear. Add potatoes and carrots and cover with water. Simmer for 5 minutes. Add chicken bouillon, evaporated milk, corn starch, salt and pepper, and simmer for 5 minutes. Add sausage; simmer 5 more minutes.
Serve with a handful of baby kale, or greens of your choice. Stir into hot soup until leafs wilt.
