Fresh pumpkin apple soup recipe

Makes about 10 cups


  • 8 cups fresh pumpkin, peeled and chopped
  • 4 cups low-sodium chicken broth
  • 3 fresh apples, chopped
  • 1 onion, chopped
  • 3 tsp. minced garlic
  • 2 Tbsp. lemon juice
  • 1 tsp. salt


In a 5-quart slow cooker, combine all ingredients and cook for 8 hours.

Per 1-cup serving: 60 calories, 0.5 g fat, 3 g protein, 13 g carbohydrate, 1 g fiber, 160 mg sodium
