Fresh pumpkin apple soup recipe
Makes about 10 cups
Ingredients
- 8 cups fresh pumpkin, peeled and chopped
- 4 cups low-sodium chicken broth
- 3 fresh apples, chopped
- 1 onion, chopped
- 3 tsp. minced garlic
- 2 Tbsp. lemon juice
- 1 tsp. salt
Preparation
In a 5-quart slow cooker, combine all ingredients and cook for 8 hours.
