Makes 6 servings

Ingredients

  • 4 large red potatoes, scrubbed, cut into ½ inch cubes
  • 4 large carrots, scrubbed, peeled, cut into ¼ inch pieces
  • 1 large white onion, diced
  • 4 cups low-fat, low-sodium beef broth
  • 1 (1 oz.) package beef stew mix
  • 2 cups water
  • 2 Tbsp. oil
  • 4 cloves garlic, minced
  • ½ cup all-purpose flour
  • 2 lb. sirloin steak, fat trimmed, cut across the grain

Preparation

Place potatoes, carrots, onion and broth in slow cooker. In small bowl, combine gravy mix and water. Add to slow cooker. Heat oil and garlic in a large skillet over medium heat. Toss steak pieces in flour to coat. Discard remaining flour. Place meat in skillet with garlic. Sear steak until brown on all sides. Do not overcook. Add to slow cooker. Cover and cook on low for 8 hours or high for 4 hours or until potatoes and carrots are fork tender.
