
Crockpot chicken stew recipe
Makes 8 servings
Ingredients
- 1 lb. sweet potatoes, washed, peeled, cubed
- 1 red, orange or yellow bell pepper, chopped
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 (20 oz.) can diced tomatoes
- 1 (15 oz.) can kidney beans, drained and rinsed
- 1 cup frozen corn
- 1 lb. chicken or turkey
- 2 cups water
- 1 Tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. dried oregano
- 1 tsp. cocoa powder
- ½ tsp. black pepper
- ¼ tsp. cinnamon
Preparation
Place all ingredients in crockpot. Cook on low for 6-8 hours, until potatoes are soft and poultry is cooked. Shred poultry with fork. Serve.
