Slow cooker black bean soup recipe

Makes 6 cups


  • 1 lb. bag of dry black beans, rinsed
  • 3 celery stalks, chopped
  • 3 tsp. minced garlic
  • 2 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 1 15 oz. can diced tomatoes
  • 1 jalapeno pepper, minced
  • 2 Tbsp. chili powder
  • 1 Tbsp. paprika
  • 2 Tbsp. cumin
  • 1 tsp. salt
  • 2 bay leaves
  • 6.5 cups of low-sodium chicken broth


Place all the ingredients in a slow cooker. Cook on low for 8-10 hours. You can serve with your favorite toppings such as shredded cheese, avocado, plain Greek yogurt or chopped green onions.

Nutrition analysis per serving (toppings not included): 340 calories, 1.5 g fat, 21 g protein, 60 g carbohydrate, 21 g fiber, 680 mg sodium.
