Ingredients

  • 2 cups fresh watermelon, cubed
  • 2 cups cucumber, chopped
  • ¼ cup cilantro, minced
  • ½ tsp. vanilla
  • 1 tsp. sriracha
  • 1 Tbsp. honey
  • 1 fresh lime
  • ¼ cup white cheddar, shredded

Preparation

Combine watermelon, cucumber and cilantro in a mixing bowl and toss. In a sauce bowl combine vanilla, sriracha, honey and mix well.  Prepare a one cup serving of salad items and drizzle sauce over the top, sprinkle with aged cheddar then squeeze fresh lime juice over all ingredients and serve chilled.
