Ingredients

  • 1 cup wild rice
  • 2 cups low sodium vegetable broth
  • 1 Tbsp. olive oil
  • 1 cup chopped apples
  • ½ cup chopped yellow onions

Preparation

Add wild rice and vegetable broth to a medium pot. Bring to a boil then reduce heat and cover. Simmer until the rice is soft and liquid is absorbed.

While the rice is cooking heat olive oil over medium heat and sauté the apples and onions until the onions are soft.

When the rice is done add the apples and onions to the rice. Serve hot.
