Roasted zucchini parmesan

Makes 2 servings

Ingredients

  • 1 medium zucchini, sliced
  • 2 tsp. olive oil
  • Salt and pepper to taste
  • Parmesan cheese

Preparation

Preheat oven to 450°F. Place zucchini on baking pan and drizzle with oil, salt and pepper. Flip with spatula. Bake for 15-20 minutes, or until zucchini is soft and brown. Serve sprinkled with parmesan cheese.
