Mashed cauliflower recipe

Makes 4 servings

Ingredients

1 head cauliflower
¼ cup lite sour cream
¼ tsp. garlic powder
½ tsp. pepper
⅛ tsp. salt
2 Tbsp. parmesan cheese

Preparation

Break the cauliflower up into florets. Put into microwave-safe bowl and add 2 Tbsp. water. Cover tightly and microwave on HIGH power for 5-6 minutes or until tender. Add the remaining ingredients and use hand blender to mix thoroughly.

Nutrition analysis per serving: 70 calories, 2 g fat, 5 g protein, 9 g carbohydrate, 3.5 g fiber, 125 mg sodium
