Ingredients

  • 2 lbs. cherry tomatoes
  • 2 cloves garlic, minced
  • 3 Tbsp. olive oil
  • Fresh basil, minced
  • Salt and pepper, if desired

Preparation

Preheat oven to 300°F. Spray a 9x13 baking dish. Cut tomatoes in half and place cut side up in the pan. Drizzle with olive oil and sprinkle with garlic and fresh basil, salt and pepper. Bake in oven for 3-4 hours, until gummy. Serve as a side item, on sandwiches, on salads or in pasta.
