Kid-friendly Lorax tree pancakes

Makes 9 servings


  • 1¾ cups whole wheat flour
  • 2 Tbsp. brown sugar, packed
  • 1 Tbsp. baking powder
  • ¼ tsp. salt
  • ½ tsp. cinnamon
  • 1 egg, lightly beaten
  • 1½ cups skim milk
  • 3 Tbsp. canola oil
  • 1 tsp. vanilla extract
  • 1 Tbsp. whipped cream, pressurized
  • Red, yellow and blue food coloring drops or gel
  • 9 toothpicks or short skewers


In a large bowl, combine flour, sugar, baking powder and salt.

In a medium bowl, use a fork to combine egg, milk and oil. Add wet ingredients to dry ingredients, stir until just combined—it should be lumpy.

Divide into five smaller bowls and stir in food coloring to create red, yellow, green, blue and purple. Use a heaping half tablespoon to scoop batter for tiny pancakes.

Cook on skillet or griddle over medium heat, about one to two minutes on each side. Skewer a pancake of each color and top with a tablespoon of whipped cream.
