Chocolate zucchini muffins recipe

Makes 12 muffins

Ingredients

1 cup whole wheat flour
½ cup all-purpose flour
½ cup sugar
½ cup unsweetened cocoa powder
1 tsp. baking soda
1 tsp. ground cinnamon
1 large egg, lightly beaten
½ cup unsweetened applesauce
2 cups grated zucchini
⅓ cup milk
1 tsp. vanilla extract
½ cup mini chocolate chips

Preparation

Preheat oven to 375 degrees. Spray muffin tin. In large bowl combine egg applesauce, oil, vanilla, milk and vanilla. Wisk. Add dry ingredients. Fold in zucchini and chocolate chips. Divide batter evenly into 12 muffin cups. Bake 15-20 minutes or until a toothpick comes out clean. Store in an airtight container in the refrigerator for up to 4 days.
