Tomato Barley Soup

Makes 6 servings

1 cup onion
1 cup celery
1 cup carrots
2 tsp. garlic
2 fresh tomatoes
2 Tbsp. olive oil
2 1/2 cups water
1 (14.5 oz) can diced tomatoes, undrained
1 (10.75 oz) can chicken broth
1/4 cup uncooked barley
1/8 tsp. black pepper

1. Chop onions, celery, and carrots. Mince garlic. Dice tomatoes.
2. Combine onions, celery, carrots, garlic, and oil in saucepan and sauté for 5 to 10 minutes or until vegetables are almost tender.
3. Add fresh tomatoes and remaining ingredients to pan. Stir thoroughly and bring to a boil. Reduce to a simmer for 35 to 40 minutes, or until barley is tender.
