Makes 4 servings
2 cans reduced sodium black beans
12 oz. reduced sodium vegetable broth
1 c. salsa
1 tsp. cumin
Shredded cheddar cheese
Sliced green onions
Low fat sour cream
1. Rinse and drain black beans. Place all ingredients in a blender and blend until desired consistency is reached.
2. Pour into a medium sized pot and cook over medium heat, allowing soup to simmer for 5 minutes.
3. Top with desired garnishes.
