Makes 4 Servings
8 oz. dried penne pasta
2 Tbsp. olive oil
3 chicken breasts
½ tsp. minced garlic
Dash salt and pepper
¼ cup low-sodium chicken broth
1 garlic clove
½ bunch of asparagus
¼ cup fresh, grated Parmesan cheese
1. Cook penne according to instructions on package. Drain and set aside.
2. Heat olive oil in skillet over medium heat. Cut chicken into one inch cubes. Add to pan with garlic, salt and pepper, and cook until done. Remove from skillet and set aside.
3. Thinly slice garlic clove. Cut asparagus into one inch pieces. Add broth, garlic and asparagus to same skillet over medium heat. Cover, and steam asparagus until tender, approx. 5-10 min. Add chicken and pasta to skillet. Stir well.
4.Distribute pasta onto plates, and top with parmesan cheese.
